Antoinette (Nanny) Leone's Spaghetti Sauce Wendy's Meatballs

Spaghetti Sauce:
Ingredients:
2# Stew Beef (She used the stew beef, but it is optional)
8 hot Italian sausage (sweet if you prefer, but I use hot) I also cut the skin off
3 Tablespoons Olive Oil
3 Cloves of garlic
1 onion
1 can paste
1/2 teaspoon of Italian seasoning (I use close to 1 teaspoon)
3 cans of Plum tomatoes, (I puree them first) * see note below
1-1/2 tsp of salt (or more to your taste)
Several shakes of pepper
handful of Parmesan cheese
Bay Leaf
Cut up Stew Beef and fry both stew beef and sausage in the olive oil until brown.
Remove sausage, add 3 cloves of garlic minced and the chopped onion and fry until
tender. Add the 6 ounce can of paste and the Italian seasoning and simmer until
darkened -(a few minutes)
Add three cans of tomatoes, (I puree them first) and 1 full can of water.
Add the salt, and the handful of parm cheese. Bring to a slight boil, lower heat and
cook 1/2 hour with the lid on, stirring occasionally.
Take the lid off and simmer slowing for at least 3 or so hours, or longer if you wish,
stirring
occasionally.
Add your sausage and meatballs the last 1-1/2 hour of cooking.
*note: If, you ever you get some fine home grown tomatoes, you can use 17 of
them in place of the canned tomatoes. Put a little oil in a pan and slowly cook the
tomatoes until they are mushy. I, then puree them, and put them through a strainer.
(I do not have the electric kind, so I will pour the pureed tomatoes in a hand held
strainer and stir them until all but the seed and the skins are left.
Meatballs:
1-1/2 pound hamburger
2 Tablespoons of onion
1 cup of flavored Italian bread crumbs
1/3 cup of parsley
at least a teaspoon of salt
1/2 tsp pepper
10 shakes garlic powder
5 or so shakes celery salt
5 or so shakes of onion powder
5 or so shakes of crushed red pepper
2 eggs
handful of Parmesan cheese
Nanny seared the meatballs on the stove top just until browned and added them to the
sauce.
If I am in a hurry, I bake them until they are browned leaving pink in the center and
then add to the sauce.
